3. Course contents *

Optimal health relates to a balanced, diversified and safe diet.  Different aspects (including function, bioavailability issues, dietary sources, chemical structures, ...) of the macro -and micronutrient classes of food (carbohydrates, proteins, lipids, vitamins, minerals) are explained.  For each nutrient the Recommended Dietary Allowances (HGR, 2016) are discussed.  The course also includes sessions on food chemistry, as well as on additives and contaminants in foods.
